Ingredients:
preparation time:15 minutes
cook time: 45 minutes
7-8 mushrooms cremini(any mushrooms or mixed is fine)
2 medium carrots
1/4 cup green peas(frozen)
1 medium sized onions
2 tblsp vegetable oil
1/2 tblsp cumin powder
1/2 tsp black crushed pepper.
1 tblsp kashmiri red chilli powder(1/2 tbslp for sprinkling)
2 tblsp plain non-fat yogurt
1 tsp five spice powder
Fresh basil for garnish
2 tblsp egg substitute(for brushing)
2 cups garlic mashed potatoes(store brought)
Preparation: Cut carrots into 1/4 inch thickness.Slice mushrooms thinly.
Chop the onions and then sautee in the pan till they are carmelized with the vegetable oil. Add th veggies(
carrots, mushrooms and peas and sautee for 5 minutes). Add spices and mix everything nicely together.
Add yogurt and then sautee for another 5 minutes.take it from the sotve top and let it cool down.
Take 9*2 inch pan and add the veggie mix. Top it with ready store brought mashed potaotes and nicely
level it on the top of the veggies. Brush the potatoes with egg subsitute. Then sprinkle the mashed potatoes
with red chilli powder and served hot as an entree. Bake in the oven at 375 degrees for 25- minutes till the potatoes are lighly golden brown and crisp.
Garnish with fresh basil Servings: 3-4 people
