1/2 cup thinly sliced onions
2 cloves garlic, minced
1 red tomato diced
1 green chilli seeded and thinly cut
1 Tbsp vegetable oil
1 pound spinach greens, washed and cut into 1/2 inch pieces
2 to 3 Tbsp chicken broth or vegetable broth (vegetarian option)
1/4 teaspoon salt
1/4 teaspoon pepper
Preparation:
In a large sauté pan, sauté onions in vegetable oil over medium heat until the onions begin to brown and caramelize, about 5 to 10 minutes.
Add the minced garlic and chilli and cook a minute more, until fragrant.
Add diced tomato.
Add the spinach and broth and cook until the spinach is barely wilted.
Season with salt and pepper.
