Ingredients: pork sorpotel


Ingredients:
2 kilos pork
20 red chilies
1 tblsp cumin seeds
1 tsp mustard seeds
1 tblsp turmeric powder
7 cloves
10 peppercorns
1 inch piece cinnamon sticks (dalchini)
¾ cup-1/2 cup white vinegar
6 garlic flakes
2 inch piece ginger
5 green chilies
Salt to taste


 

 


Method:
Grind all the spices to a fine paste in vinegar.
Cut pork into ½ inch piece. Do not wash in water. Wash in a little vinegar and place in a vessel.
|Cover tightly and let it cook in its own juice till dry.
Add 6 tblsps. Of oil and fry to a golden color.
Add the ground paste and cook till the oil floats to the top.
Add vinegar and cook stirring often till the pork is tender.
Cool thoroughly and store in airtight container.
