Ingredients: beet orange salad

  • 1 navel orange peeled, sliced lengthwise
  • 1 tblsp orange juice
    2 tablespoons olive oil
  • 2 tblsp lemon zest
  • 2 tablespoons red wine vinegar
  • 3 medium sized beets boiled for 20-25 minutes in a cooker or steamer
  • 1 sprig mint, leaves torn

In a large bowl place thinly sliced beets and orange slices. In a mixing bowl, combine the juice, olive oi, lemon zestl and red wine vinegar. Add beets and oranges and toss to combine. Top with mint.
